Because ombré fabrics change throughout the length and width, thinking about all the options of how you can cut them up and use them is something to consider before you just stack and whack it.
Cross Grain
Cutting across the ombré, selvage to selvage, gives you the maximum range of color transition.
Lengthwise
Cut parallel to the selvages if you want similar colors in larger or longer pieces.
Fussy cutting
Isolate areas of the ombré you want to use.
